We may have a cultural difference here BUT when I do pot roast I use blade steak ,in the piece, and put it in a large saucepan with about one inch of oil,preheat the oil. then I brown and seal the meat on all sides,
I roughly chop one onion and toss in, one beef stock cube crumbled or powdered beef stock powder,two teaspoons of crushed garlic, two dry bay leaves, freshly ground black pepper. I don`t add salt as that is in stock cube.
Cover and simmer until cooked to your liking,check oil level from time to time, allow to stand before slicing. ENJOY AUSSIE POT ROAST.
