This is a cut of meat form the steer's diaphragm. It used to be known as "butcher's steak", because butchers woutld typically keep it for themselves, rather than sell it. It has the flavor and texture of flank steak, but it's not very tender. Therefore, it should be marinated and then cooked quickly over high heat. It's a very traditional part of Northern Mexican cuisine.
