Actually GOD created the rainbow to remind mankind that HE would never destroy the earth with water EVER again. The next time GOD will use fire. We would all like to think of the rainbow as a symbol of peace, though that was not it's purpose. It was simply a reminder that HE would never punish man ever again by way of water.

The thing that hangs in God's office to remind him not to recycle his water softener again.

A rainbow is created as a result of the rays from  sunlight passing through  vapors of water in the sky.  Each vapor  becomes a prism like a mirror breaking down sunlight into individual colors creating a spectrum. If you notice, when you see a rainbow, the sun is out and it is probably sprinkling outside. Kind of cool to figure that two very beautiful creations can create such a divine spectacle. GOD made a point to remind us that HE will never destroy the earth with water ever again. The next time will be fire.
