The making of beer requires aerobic respiration to use up oxygen gas before fermentation begins. Why is this step important?

Because if you still have oxygen gas the yeast will continue to do aerobic respiration to make energy. The yeast makes more energy by doing aerobic respiration instead of anaerobic, therefore, if the goal is to make beer--> get rid of the oxygen gas so that the yeast does fermentation producing ethanol :)
