Tell her to put up a few extra tents with sleeping bags. She's having more guests than she realized! :)
I would stay away from Jell-o, except for the sugar-free. It's just empty calories, and you'd be better off eating fresh fruit. You're right about sugar causing weight gain; the sugar causes a rise in insulin, and that promotes fat storage of any extra calories that are consumed, no matter if they come from protein, fat, or carbs.
