with the setting sun, is the next day.
*With that said, in the summer months, the days are longer (earth is closest to the sun) and in the winter, the days are shorter (earth is farther away from the sun). However, we know the day is over, as soon as it gets dark!

It's funny you should ask the question because in France where I work 6 months a year whenever you enter a shop you are expected to say a Bonjour or a Bonsoir (good day or good evening) So I asked your question and was told 5 to 6 o clock. I presume the same applies in England.
