When radishes bolt and get tall and lanky it's because the weather has gotten too hot and they grow too fast. You need to plant them as early in the spring as possible and they will do fine as long as the weather is fairly cool. After the weather starts hitting 80 degrees F plus continuously, that's when they start to bolt.
