When potatoes are freshly dug out of the soil they are sometimes green. I usually let them sit in the sunshine to dry out for a couple of days. The green may or may not fade but they are now safe to eat.

If you bought a bag of potatoes from the store and one was green I hope they have been processed before shipping and are safe to eat. If you don't feel safe with it, throw it out.
