To send text as an email, first you need to decide if you want it in the email body or as an attachment.
In email body text: manually type in your text or copy and paste it from another source (webpage for example).
As an attachment to the email: Save your text in another word processing program like Microsoft Word, Simple Text or Notepad and attach the saved file to the email.
