How do they see themself fitting into your organization, why they left their last employer, and do they mind if you contacted their last immediate supervisor. If a person wants the job enough, for whatever reason, they'll tell you whatever they think you want to hear. But, it'll give you a chance to see if they know what you are looking for in a prospective employee, and to see how they react to a certain question. People can have degrees and experience, but if they have a bad attitude or an overly-inflated view of themself...you could easily hire a prospective headache. Sometimes a question as simple as, "Have you ever been re-hired by a former employer when work picked up?," says volumes in finding someone who has a clue and a good work ethic.

Keep it job related, not personal. Just last week I walked out of an interview because they insulted my current employer twice. I have nothing against my current employer, only my long commute.
