    why do chefs say cut off both ends of carrot before using?

    You might think that it is wasteful so to each his own. The bottom of the carrot contains the root greens ( usually in markets are not quite that edible.) The top part is usally cut off for sight apppeal only. People eat with their eyes. Unfortunately some of the greatest parts of a vegatable are in the root greens and tips. In conclusion the reason is for me.......they want their dish to look better.
    I cut them off, does this make me a chef?
