To remove music from your iPod you will to use your computer and open your iTunes library. All changes are made there.
Go to Preferences in iTunes. Click on the Devices tab. Select 'Prevent iPods, iPhones and iPads from syncing automatically'. Now connect your iPod. Your device won't sync automatically with the library. When you see your iPod on the left sidebar in iTunes, click on it and enter its music library. You can remove songs from there.
