Gesundheit means 'Good health', and is the equivalent of the English language "Bless you" when a person sneezes. At least the German language doesn't pander to the medieval superstition that, when one sneezes, one's open mouth is used by demons to enter one's body!
If one wishes to actually pronounce a blessing, the correct form is "Gott segne dich".
