The second crown, located best sub 200 watches at four o'clock, is the traditional time-setting crown. Inside the watch is a link Soprod C125 GMT movement with 42 hours of power reserve, which means that the first position of the crown is to independently adjust the GMT orologio ingersoll hand (clockwise) and the date (counter-clockwise). Nivada is no stranger to using Soprod movements, and this GMT variation makes sense.

Each of the recruited pilots, Maverick's underlings, wear these special IWC watches, both link in link chronograph, and time and date configurations. And that's not all. In a pivotal scene toward the film's end, you'll see a prominently featured IWC stopwatch. To my knowledge there isn't a modern stopwatch in the IWC catalog so it's possible link this was made just for the film.
