    will my liability insurance cover damage done by someone not listed on my policy

    No, you need to add their name as a driver of the car in order for your policy to cover them. Otherwise they need to have their own insurance which will cover them no matter what car they drive. I had to pay just $50.00 extra on my policy to cover my brother when he drove my vehicles.
