If you are serving other food, you could probably get by with 1/4 lb per person. We are always being told a serving of meat is 3-4 ounces.  
Some people are going to eat more than "their fair share" while others won't eat any at all. If they were one of a few different appetizers, I'd probably get 20 pounds of wings. And, I'll bet you have some left over.
