I thought town started out at ground level and anything not wanted was tossed out the nearest window. A thousand years of accumulated trash and filth of every imaginable ilk could burry a house pretty quick. So to keep the rooms useable stone was popular because the upper house tended to settle excessively if the floors were all made of wood. That’s why the catacombs of europe have so much stuff buried in the walls and floors of ancient dwellings. The deeper you go the greater the stench and the lowest places are usually open sewers.
