In case of a last second stay of execution. If the needle for the drip has already been inserted into the skin they can not risk a lawsuit if the needle is dirty and infects the person with something deadly. There is also the legal matter where cause of death has to be due to lethal injection as ordered by the court and not due to some fast killing virus found to be on the needle.
