If it's the iPad just hit the stop button. When an audio app is running and you hit the top button on the iPad, you are just turning the display off. The top button does nothing more than put the iPad into sleep mode anyway as you are NEVER actually turning it all the way off. So just hit the stop button and put the iPad to sleep. If you are really paranoid, you can always double-tap the home button to bring up the multi-tasking bar, press and hold on the icons until they start to wiggle, and then push on the red circle icon located next to all of the app icons to fully close them.
