Probably, it's too cumbersome and they feel it's not necessary. By signing the credit card receipt, the signer is in effect stating that the total is correct.

Could it be related to restaurant realizing that by not itemizing some customers are more likely to spend more when a customer can include a friend or significant other when submitting a credit card bill for a company reimbursement?
