Loaded baked potato salad is my favourite potato salad to make during the hot summer months.  We had it with ribs and corn on the cob tonight and it was delish.  I don't measure the ingredients, I go by personal taste. List of ingredients here

Red potatoes-diced

Spring onions (green onions) white and green bits

Smoked bacon lardons or crumbled up bacon

grated cheddar cheese

sour cream and mayonnaise (mixed)

Salt and pepper to taste

I made stew last night and it was tasty.  Don't forget to simmer the meat with a little vinegar in the water to make the meat tender..........
