Why don't you start with the minimum amount that won't ruin it, add a bit more, mix--add more a little at a time until you find the consistency you are looking for. I don't know much about plaster o' paris but like any plaster, depends on the work, sometimes you want it drier some jobs wetter for smoothness.. if you are making 'figurines' I would think wetter for smoothness.. But I am only guessing at that.
