Phrase "to eat your words," you have made a comment or committed to a statement, and you are then proven wrong, therefore you have to eat your words and its a metaphor. The people who are thick skinned and do eat their words are often unrepentant  so their having to eat their words does not cause them any discomfort , but for those who are sensitive, the eating of their words or having to do so, causes them stomach upheavals at the very thought and they cringe and squirm over it for months after often to the detriment that they do not commit in case they are proven wrong. The former exist more often than the latter.
