Are you using a canned malt, or fresh grains? And are the grains being roasted? I make beer using canned Amber Ale malt, and if I stay consistent with the hops, etc. each time, it is uniformly what I like. Have you altered your original recipe? Check with your beer supply shop, and even take a sample to them, they should be helpful. Keep notes when you brew, that way, if you need to either tweek or troubleshoot a brew problem, it will help.
