Bob/PKB...it took me a minute too. Asking "their telephone conversations" or "one's telephone conversations".
Employers have the capacity to use everyday devices to spy on workers and eavesdrop on their telephone conversations in the workplace.
(I removed "to" as it was not needed and I would also change capacity to capability).
This is actually how I would word the whole thing...

I believe that this is a "grammar question" only, not an ethics question!!
Is the correct word, (as demonstrated in the question), "THEIR" telephone conversations OR.....
should the correct word to use be...."ONE'S" telephone conversation? That's all.
Note the ending>>>"SHOULD THE ANSWER BE THEIR OR ONE'S"<<<

As an employee, one shouldn't be doing anything but working during those hours so why would it concern you to have your employer be invested in what you are doing during the hours you are being paid to do a job. Maybe I am wrong here but I have worked in many places over the years that the staff has ripped off the business and dolly lagged effecting everyone else in the job. Trust is earned!
