I make a sort of hash, we call it bubble n squeek, just mash together any leftover veg, I often deleberately cook too much so I can make this, after mashing I add some parsley, season with salt and pepper roll into about a palm size, put them into hot oil (not much) squash them down a bit and cook until theyr'e nice and brown, I serve this with bacon,eggs and grilled tomatoes, my favourite veg to do this with is potatoe, pumkin,corn,cabbage and peas.
