It means "an attempt to attain happiness". What constitutes "happiness" is totally up to the person doing the defining. It means different things to different people. To some people, a job is a way to attain wealth, which in turn gives the person joy. For others, pursuing a life of helping people could be a way to attain happiness.
As for me, my "Pursuit of Happiness" is simply to be able to take care of my family to the best of my ability.
