          They are best if vine ripened.. The sugar in the fruit is no longer produced after they are picked... However you can set them in a sunny area in the house to let them turn red.. Also I agree fried green tomatoes are fabulous if you have some on hand.. try it.

            We always had lines of ripening tomatoes on our window sills when I was growing up.
