      I always cook in the oven in just plain water for about 2 hours on 150 and always cover and let it cook.... and then take it out and pour of the stock and use for gravey then put back in oven for about 1/2 hour on really high to crisp up then cool and serve

        sear it quickly on all sides, then cook to rare/medium in the oven with a splash of red wine or stock
