Yes, you should put the cans in hot water before filling them with the apple sauce. Otherwise, germs might survive that can f... your sauce up before time. Also pour boiling water over the spoon you're using. Oh, and another thing: if you have a silver spoon or other item of silver cutlery, put it in the jars while you are filling them - it reduces heat and thereby the risk of the jar flying around your ears (I suppose you're putting the apple sauce into glass jars?).
