The ‘ you are referring to is an Apostrophe and marks the omission of one or more letters (as in the contraction of do not to don't and is not to isn’t).
Also an Apostrophe is a marking of possessive case (as in the bird’s wing, dog’s tail, rhino’s horn ).
In the solitary case of single lower case letters, it is preferable to use an apostrophe to avoid confusion, as in 'mind your p's and q's' .
It is also often used in forming certain plurals. The use of the apostrophe to form plurals of proper words, as in apple's, banana's, etc., is universally considered to be incorrect.
