    I roasted a loin of pork and it is too tough to eat. Any suggestions on how to re-cook it? I hope you aren't going to say throw it away

    I'm thinking you cooked it in the oven with no liquid under it for too long and now it's dry and tough. Or is it that you haven't cooked it long enough?


    If it is dry, you could cut it up into slices or cubes and cook it with fried potatoes and onions. Let the meat get well into the cooking oil but don't let it cook much--get it in the juice and warmed to where it will soak up the liquid.


    Or you could slice it and make something like scallopini or parmesean. That should soften the meat up to where it is edible. But it might not and all the other ingredients will be wasted. I think if you added it to eggplant parmesean that would soften it up and make it tasty.


    Or you could cut it into cubes and make a favorite soup with it. Add it to vegetable soup or lentil soup maybe.


    You could cut it into cubes and saute it in a frying pan for a little bit maybe with onions and garlic and then make gravy and cook the meat in the gravy for a bit. That would tenderize it. I'm hungry now. Bon appetit.

    Generally any overcooked meat i.e., beef, chicken or pork, can be simply put in a pot and covered with plain water, bring the water to a boil, and back the heat down to a simmer. Depending on the size of your roast, it shouldn't take any longer than an hour to tenderize it.  Altho' it would be faster if you cut it into smaller chunks.  If you have a pressure cooker, that would work in about 20 minutes or even less if cut into smaller pieces, and use about a cup and a half of water.  If it has good flavor and is tough - how about grinding it up and using it in a spagetti sauce or taco's, enchilada? or even Chili con Carne sounds good too.  Good luck.
