Your gall bladder stores bile, does not produce it (produced in the liver). It stores the bile till it is needed for digestion. You can live without your gall bladder, however food digestion will be slightly different without it. That is because the bile being produced is no longer being stored till it is needed. It is always flowing into your digestive system.

It it called Gallbladder and it stores bile - when you eat fat the bile goes through the duct (bile duct) into( the small intestine) the duodenum to carry out various dietary functions, solubilizing cholesterol, fats, and fat soluble vitamins to facilitate their absorption and more. When the gallbladder is removed - there is no problem the liver takes over.
