Casein is a name for family of phophoprotein proteins commonly found in mammalian milk (cows and human). It is a major component of cheese and also being used as a food additive, that supplies essential amino acids, carbohydrates, calcium and phosphorus.
A small fraction of the population is allergic to casein.
