Gas and bloating comes from carbohydrates that are incompletely broken down in the upper intestinal track. For example, the body does not fully digest the cellulose and oligosaccharides found in bran, dried beans, peas and lentils, cauliflower, Brussels sprouts, broccoli, and cabbage. Lactose, the carbohydrate in dairy products, is incompletely digested by adults around the world, and sugar alcohols, such as the artificial sweeteners sorbitol and xylose, produce gas when eaten in large amounts. Normal bacteria in the colon make gas as they ferment the undigested carbohydrate.
