When a right handed person uses a fork in their left hand it is so that meat can be cut with a knife while the left-fork is used to steady the meat for slicing. The fork then goes to the right hand to pass food to the mouth with the fork tines turned up. Turning the fork tines down to stab food and pass food to the mouth is generally viewed as uncultured and aggressive eating which is frowned upon in polite society.
