You could dry them to make prunes. Or I bet you could make a wine or other spirit from them.

We have surplus plums most years and after jam and chutney have been made we allow the plums to ferment and distill the juice to make alcohol. 100kg of plums make about 10litres of hooch. Check regulations for distillation where you live.
I believe it would be best to can them whole or in half in their own juice. Freezing would probably make them turn dark and they wouldn't look like anything you would want to eat. If you did some up in jam, you could give it away for the holidays and birthdays etc.

you can also make really good sauces, plum & chilli for chinese style cooking or marinating ribs etc, they also preserve well i.e in brandy to use later on for desserts and tarts
