How do I braise meat? The recipe I'm looking at says cook a beef brisket in the oven for an hour, then wrap in foil and braise for 3 hours. Does this mean I just wrap it in foil and continue to cook it at the same temp in the oven for the specified time or do I need to remove it from the oven and the juices, and wrap the beef separately in foil, then put it back in oven or do I do it in a dutch oven on the stove top??? I'm just not clear on how to braise. Thanks.
