A la carte is a French phrase that literally translates to "according to the menu." Today most restaurants have a la carte menus but the term is mostly used in fine dining establishments.

I thought it meant "pay more for less"...

Where I live, "a la carte" means the item is served by itself. For example, an enchilada is served without rice and beans, as is found in "dinner specials".  A la carte items are much less expensive;  I like to order two a la carte enchiladas because I don't care for the rice and beans, but love the enchiladas!

You've got my mouth watering. I miss my Mexican food restaurants. I seldom eat my rice when I order Mexican food, but I like the refried beans especially if there is cheese on top.

We should open a simple Mex restaurant in the UK.

We've discussed opening up a little shop here serving burritos, pinto beans & cornbread, Frito Pies etc. Roy doesn't seem to think people here would go for this kind of food. No one knows what a Frito corn chip is, they don't sell them here. One lady gave me a bag of "crisps" that were the shape of a corn chip, but it was light and airy just like a Funyun.
