15/8 is an improper fraction because the numerator is larger than the denominator. For every 8 eighths, you have 1. Subtract 8 from 15 and you have 1 with 7/8 left over (15-8 = 7) 1 7/8.
If you had 12/8, you would do the same thing. 8 from 12 = 4 = 1 4/8 or 1 1/2.
The dividing instruction is correct; I just use subtraction because it's easier than the guesstimating, multiplying, and subtracting that goes into the process of division, but I've been doing this stuff for a long time and it makes sense to me.
