    I want to incorporate the chocolate into a cream cheese filling

      You can melt chocolate in a microwave or on top of a double boiler.

        get a boiling pan of of hot water and put a nowl inside the pan and put your chocolate in the bowl and simmer the water and your chocolate will melt and a gentle stir
