Oil in the pan... saute onions, add carrots and simmer with lid on... you can add chopped garlic if you like. Fry a couple of eggs separately. Add rice to original pan... mix and cook. (this is best with day old rice). When all things look like they are warm and getting their thing on add eggs and peas...the last step is the soya sauce.
I also add saute'd mushrooms and or anything I can find in the fridge. It is a great way to use those leftovers up. Imagination is key. I also do a spicy rice version with a bit of paprika and ceyenne.

Cook your rice by boiling let it dry out. Dice your onions ginger and garlic . get your eggs whisk them coat your wok with oil get it hot coat your wok with a great big omelette throw in your onions garlic ginger rice and frozen peas some Soy sauce stir it all up as hot as you can get it without burning it and add what ever else you want and you've got it
