Protons and neutrons are composed of quarks of which there are 6 varieties, as above. Also you have leptons : electrons muons, tau, electron neutrinos, muon neutrinos and, of course, tau neutrinos.
These are stuck together by bosons assuming that the Standard Model is correct. We await the discovery of the Higgs Boson to prove this theory.
So a proton is composed of 2 up quarks and one down quark, and a neutron is made of 2 downs and one up.
